Party of Eight

Normally when David and I entertain we usually have just one other couple aboard, sometimes two. But last night had a full boat load, and it was fun. Three other couples joined us making eight on board Bruadair, the most we've entertained at any one time on this small boat. We had David and Jan (Winterlude), Karen and Carl (Changing Tides), and Joe and Helen (De Ja Vu) join us for drinks and appetizers. I was surprised how comfortable it was aboard with so many people, I think the two additional seats we added in the cockpit made a huge difference.

David made a faux smoked salmon dip (recipe below) served with crackers, Jan brought some fresh baked chocolate chip cookies and Helen brought some garlic bread. Everyone stuck around for a few hours and the conversations were lively and fun with topics about boating, destinations, politics and religion.

The wind is back up to the 20 knot range but the seas are fairly flat here behind the reef and the sun is shining. The last few days we've been doing the normal snorkeling and fishing and for our evening entertainment we've started watching season 2 of West Wing, great show. We just finished watching season 3 of Weeds, can't wait for season 4!


David's Faux Smoked Salmon Dip

1 can of salmon, bones removed
1/2 teaspoon salt
1 tablespoon lemon juice
2 teaspoons minced onion
1 teaspoon of liquid smoke
1 teaspoon powdered garlic or one clove of fresh garlic
1 teaspoon parsley
1 8 oz. package of cream cheese, room temperature

Mix the above ingredients together in a mixing bowl. When mixed place in refrigerator to chill. Then place in your serving dish and garnish with sliced green olives. Serve with your favorite crackers.
